If you love an absolute jam fest you're in the right place. 'Passimiento' (Sometimes called Ripasso or Appasimento) wine are made from grapes that are dried before the winemaking begins. Sometimes they are picked and left out in the sun, in this case they twist the bunch on the vine so the stalk breaks, leaving the grapes hanging, but no longer receiving water.

The grapes lose 40% of their water content, concentrating the sweet juicy flavour. This is the only way to drink jammy red wine!
